Grilled masala pmfret with raw mango salsa

Yeah, one of the much awaited sections is open. We are starting with the King of Fruits, Mango. Our chefs are ready with a non vegetarian(Grilled masala pomfret with raw mango salsa) and a vegetarian(Mango Chutney) dish with Mango.


Non-Veggy : Grilled masala pomfret with raw mango salsa

Ingredients:
Pomfret:1
Red chilli Powder:10gm
Jeera Podwer:2gm
Turmeric Powder:2gm
Coriander powder:2gm
Raw mango:1
Tomato:1
Onion:1
Green Chillies:1
Fresh coriander:15gm
Oil:20 ml
Salt to taste and juice of 1 lemon
Preparation:
Wash and clean the pomfret of its insides,thoroughly.Apply lime juice,salt, jeera powder,coriander powder,turmeric powder, red chilli powder to the pomfret and marinate for atleast 30minutes in the refrigerator.
For the salsa,chop raw mango,tomato,onions and green chilli in small dices.Mix with chopped coriander and salt and chilli.
In a pan,heat the oil and cook the pomfret on both sides,till done.
On a plate,place the raw mango salsa in the middle.Place the pomfret on top of the salsa.
Spoon some more salsa on top of the pomfret.
Garnish with a spring of coriander and slice of lemon.



Veggy:Mango Chutney

Ingredients:
Raw Mangoes:4
Panch Phoran powder(coriander seeds,cumin seeds,fenugreek seeds,mace seeds and ajwain):1 tbsp
Ginger-garlic paste:1/2 tsp
Turmeric:1 pinch
Salt:1 tsp
Oil:1 tsp
Sugar to taste
Steps:
Peel the mangoes. Cut it into small cubes.Mix it with salt and turmeric and sun dry for one day.Heat oil and fry the mangoes in medium heat for 10 minutes till golden brown and soft.In a seperate pan roast the panch phoran powder. when the moisture from the mango is evaporated put off the fire and mix all the roasted spices.
